Double Chocolate, Cardamon, Pistachio Cookies

Ingredients:

2 cups chopped dark chocolate (70% or higher)
4 oz unsalted butter, cubed
1 1/4 cups flour
1 tsp baking powder
1/5 tsp salt
2 tsp ground cardamom
1.5 cups coconut sugar (or brown sugar)
4 eggs
2 tsp vanilla
1 1/4 cups pistachios, chopped
1/2 cup chopped dark chocolate (or nibs)

Make:

  1. In a large mixing bowl, combine eggs and sugar. Mix until smooth.

  2. In a separate bowl, sift flour, baking powder, salt, and cardamom together.

  3. Over a double boiler, combine cubed butter and 2 cups of chopped dark chocolate. Stir until melted and fully combined.

  4. Slowly add the melted chocolate mixture to the egg and sugar mixture. Mix until combined. Add vanilla.

  5. Slowly add dry sifted ingredients while mixing. Mix until all is blended well and smooth. Add pistachios and remaining chopped chocolate (or nibs)

  6. Allow dough to cool for about 20 minutes.

  7. Scoop cookies onto a lined baking sheet. CHILL cookies for about 20 minutes in frig before placing them in the oven.

  8. Bake cookies at 350 degrees F for 10-12 minutes. The cookies should look dry, not wet, when they are done. Allow to cool for 10 minutes before transferring to a storage container.
