No Bake Chocolate Oatmeal Cookies

Ingredients

1 stick unsalted butter
¼ cup unsweetened cocoa powder
1 cup sugar
½ cup whole milk (or plant-based milk of your choice)
1 teaspoon vanilla extract
⅔ cup peanut butter (or nut/seed butter of your choice)
3 cups rolled oats
1/4 cup (at least!) of dark chocolate chips or chunks (70% or higher)

Directions

  1. In a medium saucepan, add the butter, cocoa powder, sugar, and milk. Heat over medium heat, stirring until the mixture is combined and the butter is melted.

  2. Add the vanilla extract, oats, and peanut butter. Using a wooden spoon, stir well until combined.

  3. Prepare a large baking sheet with parchment paper. Using a cookie scoop, scoop out portions from the wet dough and place them about 2 inches apart.

  4. Allow them to cool and set completely before serving, about 30 minutes.
